Orecchiette (Little Hats) Sicilian Style

This is one of my favorite recipes... delicious year round, especially in the Fall

Ingredients:

1 lb. Orecchiette pasta cooked al dente

1/2 lb. Hot Italian sausage (loose)

8 oz. Rapini (Broccoli Rabe)

1/2 pint Garlic Cream sauce

2 oz. Cognac

Directions: In a large skillet (or wok) crumble and brown sausage. Add rapini and flame in cognac. Lower heat add Orecchiette and garlic cream sauce careful not to let sauce boil.

Will feed 4-6 Buon Appetito

This looks like a MUST....question: how do you make the "garlic cream sauce" ?

When I make it, I use 1 pint of heavy (whipping) cream and 3-4 cloves of roasted garlic. I put the garlic in cheesecloth because you remove it. Put over low heat. You have to be careful not to let it boil. If you boil a cream sauce it will break (bead up). That means you have to watch it, if it comes close take it off the heat. Only takes about 20 mins.

Sounds good...thanks for the recipe...I'm actually planning to try it out tomorrow for dinner...just not sure if I can find the rapini now....

If you look for broccoli rabe, it's the same. If not, regular broccoli will do. Rapini is kind of bitter, that's the only real difference.

This turned out so well on the menu in madison, Barry Alvarez (the God of Madison) came in every Wed night to have it. One Sunday a waitress came in the kitchen and said a customer wanted me... She was crying- she said it was just like her Nonna in Sicily made.

It's easy to make too. When you flame cognac it gives off a vanilla flavor that really goes well with the cream sauce. I put it on the menu at a restaurant in Madison WI and Barry Alvarez came in every Wed and had it.

As an Italian who loves to cook, the flamed cognac is an exciting new twist - looking forward to trying it out!
By the way, the literal translation of orecchiette is 'little ears': from 'orecchie' (ears) + the suffix '-ette' (small).
There is, however, another type of pasta which translates to 'small hats': the (utterly delicious) 'cappelletti'!
