My cholesterol dropped to normal shortly after I started incorporating green smoothies into my diet. I started growing microgreens for that purpose. My favorite is to use one banana, 1.5 oz of sunflower shoots, 1 TBSP of chia seeds, 2 TBSP of almond butter, and just enough almond milk to keep things nice and smooth and not too watery.

I also started taking the microgreens to market. We sold just over $11,000 worth last year. Needless to say we’ll be expanding our microgreen production this year.

Kale or spinach works well. I prefer the sunflower shoots because they are a complete protein.
