Being new here to Steemit many of you don't know me yet. I'm a fairly big guy at 6'5" tall weighing in at 350 pounds. I'm a programmer by trade and have been 'riding a desk' so to speak for the majority of my working life. The years of sedentary life have certainly taken their toll on me.
A little over three years ago my wife and I decided it was time for a change and we moved from our waterfront/canal home in Bayou Vista, TX where we had a postage stamp sized yard out to our present 2 acre homestead in Santa Fe, TX. At that point in time I weighed in at 418 pounds. The goal was to get some chickens, grow some of our own food, and make a conscious effort to improve our health.
I'm not going to say we failed at that endeavor, but early last year I was diagnosed with type 2 diabetes. I was still hovering around 400 pounds. My doctor wanted to start me on drugs and I didn't want to have anything to do with it. It was time to get serious with the whole diet thing. After 6 months of a strict, calorie restricted, paleo diet that involved a bunch of food we were growing ourselves, I had lost maybe 15 - 20 pounds and my diabetes didn't improve one bit. I started feeling like I had in fact failed.
Thank goodness for the Internet where I discovered Dr. Jason Fung and his book The Obesity Code. This gentleman is a REAL doctor, a nephrologist in fact, with REAL patients. In his book he goes through the top peer reviewed medical research and shows that the standard advice from doctors of diet and exercise has a 95% failure rate. Yes, you read that right. 95% failure rate! I didn't fail, the medical community failed. Oh, and the research shows that exercise contributes less than 25% to weight loss, not that I exercised much anyway. I get pretty worn out working around the homestead.
So what was Dr. Fung's solution? Intermittent fasting. Now before you go knocking it I can testify that it works. I started skipping breakfast and eating two meals per day with no snacks somewhere between the hours of noon and 8:00 pm. For the most part I ate healthy, paleo style meals. No dieting. After all, diets don't work according to the medical research. I really didn't think of this as fasting. More like delaying breakfast until noon. After 2-1/2 weeks my morning 'fasting' blood sugar levels had returned to normal. Unfortunately I wasn't loosing any weight.
The next step for me was to start fasting for longer periods. I started eating every other day, and that's the pattern I'm in right now. At my last doctor's visit my A1c level had returned to normal, and I had dropped nearly 60 pounds. My diabetes was gone! I finally found a solution that worked for me.
So what are my goals for a healthy 2018? Well, I think I'll start with the following:
- Keep intermittent fasting. No dieting. Diets don't work.
- No exercise. Lord knows I get plenty of exercise with all the projects around the homestead.
- Grow more and eat more of my own food.
- Raise some meat chickens, quail, and/or rabbit to improve the quality of my protein intake.
- Do at least two 7-10 day long fasts within the next year.
The first two on the list are no brainers. They are what I've been doing, and what led to the reversal of my diabetes. My plan is to keep doing them because they work.
The next two are things I hope to do this year. I'm working on improving a large area in the back pasture and converting it to a Back to Eden garden. I also have my chickens working for me improving different areas of the pasture and adding some nitrogen rich fertilizer. I'd like to raise some meat chickens, qual, and/or rabbit, and I think I have finally convinced my wife of the idea. She's worried about getting attached to the animals. I've assured her that I'd be the one doing all the processing.
The last one is the big one. I still have an adversarial relationship with food. I've heard of people fasting for long periods of time for religious reasons, etc. My goal is to fast long enough to reset my relationship with food. I hope a long term fast will help me to break it's hold over me.
Well, that's it. It's not a big list per se, but I can foresee some challenges in there. I'm hoping that with the support of my family and friends I'll gain some ground and reverse the ill effects on my health riding a desk has had on me all these years.
I have always heard such GOOD things about this diet. One day we may try it, once we get the high cholesterol issue under control. The Dr strictly recommended the Mediterranean diet for my husband.

My cholesterol dropped to normal shortly after I started incorporating green smoothies into my diet. I started growing microgreens for that purpose. My favorite is to use one banana, 1.5 oz of sunflower shoots, 1 TBSP of chia seeds, 2 TBSP of almond butter, and just enough almond milk to keep things nice and smooth and not too watery.
I also started taking the microgreens to market. We sold just over $11,000 worth last year. Needless to say we’ll be expanding our microgreen production this year.
Sunflower shoots? Hmmm, never knew those could be used.
I have all the other ingredients and this sounds like a nice mid-morning pick-me-up smoothie for him

Kale or spinach works well. I prefer the sunflower shoots because they are a complete protein.

Well that is news to me! I had never heard of this type of strategy to lose weight before. I suppose it makes sense. I fasted for 24 hours once this year and didn’t think I was going to make it. I can’t imagine going 7-10 days?! Best wishes to you and hope you succeed!
Hey man you should check out the documentary "What the Health" I learned a lot from that and it changed my life, it is really an eye opener if you keep an open mind. Also check out some of the speeches by Gary Yourofsky, and the work of Doctor Michael Greger. Not just me but my whole families health has changed drastically!

As a person with a nutrition and fitness background I have advocated for this lifestyle as there is some good sound science behind it. To me it makes perfect sense. However, I definitely received a lot of criticism from my fitness peers who are stuck in the everyone has to eat 6 small meals a day and that has to start with breakfast. Keep up the great work. I have followed you and look forward to hearing more about your journey as you continue to explore your fasting periods.
I myself follow a fasting routine, as well, I am in the process of transitioning to a vegan diet. Right now I am I only eat roughly two to three meals a day between the hours of 11 and 6.

The 6 small meals a day is the WORST diet ever invented. Every time you eat your insulin spikes. It is a proven medical fact that increased insulin causes obesity, and creates insulin resistance leading to diabetes. So yeah, let’s follow a diet that keeps our insulin raised all day long? I think not.
The reason intermittent fasting works is because your insulin levels remain lower for longer periods of time. This reverses insulin resistance and leads to PERMANENT weight loss.

This may be a bit macabre, but since we are what we eat, even if she does become attached to them, your bodies will use their parts to build your families parts & they'll still be with you all. At least they'll be made of love, affection & good eats that can be savored & appreciated. Not a bad cycle to perpetuate!
You're living a life that sounds close to my dream, so I've pondered this as well & I figured I'd eat/sell the ones with traits that aren't symbiotic to my life that I don't want to risk breeding into the world first. Then at least life may get better in their absence, even though I'll still have to process & digest them & deal with hurts that arise. Also, it may lead to better animal care to make them tastier & build better muscles, so win win.
My goal by 2020 is to only eat animals that I'm willing to kill & raise myself or pay out the nose for someone else to do the work that will vouch for their conditions & the meat itself will back their word up. I can't take on much more of the pain & suffering that it feels like I consume with factory meat. I try to make their matters new existence into me one of appreciation & joy as I savor them, but the struggle is real.
Congrats on all your successes so far, your life sounds incredible! I love fasting too & hope it helps me drop some of the excess baggage I've been carrying & keep picking back up.
One easy way to challenge your relationship to food is to decide if it's something you want to build your body out of. I wouldn't make my house out of cardboard & garbage unless it was an emergency so I try not to do that with my body anymore unless I can't resist.

No dieting. Diets don’t work. If an opportunity comes up to grab some ice cream with family or friends, then have ice cream. If your coworkers invite you to lunch at an Italian restaurant, then go have pasta. Remember, you’re not on a diet. Make healthy choices when you can, but more importantly incorporate 16 or more hours every day or two where you don’t eat at all. Just water, coffee, or tea. If you’re struggling, have water with some apple cider vinegar and lemon juice, or some bulletproof coffee. No snacking during the fast . . .
