Panela, papelón or piloncillo, is the molasses or concentrate that comes from sugar cane. It is unrefined and unprocessed, which is why it is dark brown in color. It is super sweet and has a rich flavor, as if it had spices such as cinnamon or cloves, but it has none of these in its components. It is pure sugar.
