Delicious pizza with challenges by katou.kanga [Eng-Spa]

So this afternoon I finally decided to test the oven out where I'm staying here in Morelia, Michoacàn Mexico and even if I didn't have a pizza pan nor pizza sheet I decided to put it in a regular frying pan which ended up being the main drawback🤭
I do deserve extra points for having made both the pizza crust and sauce myself😋

Así que esta tarde finalmente decidí probar el horno donde me estoy quedando aquí en Morelia, Michoacán, México e incluso si no tenía una sartén para pizza ni una hoja de pizza, decidí ponerlo en una sartén regular, lo que terminó siendo el principal inconveniente.
Me merezco puntos extra por haber hecho tanto la corteza de la pizza como la salsa yo mismo.

But first thing's first...the pizza crust!
Put 280g of wheat flour in a plate or bowl. Mix in more than a pinch of garlic salt, herbs, and or organo if you wish. I had live yeast so you must humidify it. 2 small teaspoons of live yeast (a half a pack or 5.5g) in a small saucer. Heat up 15ml of water which you'll pour into the yeast when it's warm enough (never cold!). Then add a small teaspoon of brown sugar or honey to the yeast which will help it dissolve.

Pero lo primero es lo primero... la corteza de pizza!
Poner 280g de harina de trigo en un plato o tazón. Mezcle más de una pizca de sal de ajo, hierbas y/u organo si lo desea. Tenía levadura viva, así que debes humidificarla. 2 cucharaditas pequeñas de levadura viva (medio paquete o 5,5 g) en un platillo pequeño. Calienta 15 ml de agua que verterás en la levadura cuando esté lo suficientemente caliente (¡nunca frío!). Luego agregue una pequeña cucharadita de azúcar moreno o miel a la levadura que ayudará a que se disuelva.

Incorporate the yeast mix little by litte into the flour with a wooden spoon. Then add 2 tablespoons of cold pressed, glass bottled olive oil (organic non GMO if possible). At this point you will start kneeding the dough with your hands. The dough will break apart in the beginning. Adding a little cold water toward the end will help to mold it together. I add more garlic salt and kneed it together. Lastly, place the ball of kneeded dough under a small towel for an hour to let it rise.

Incorporar la mezcla de levadura poco a poco en la harina con una cuchara de madera. Luego agregue 2 cucharadas de aceite de oliva embotellado de vidrio prensado en frío (orgánico no transgénico si es posible). En este punto comenzarás a arrodillar la masa con las manos. La masa se romperá al principio. Agregar un poco de agua fría hacia el final lo ayudará a moldearlo. Agrego más sal de ajo y juntarlo. Por último, coloca la bola de masa arrodillada debajo de una toalla pequeña durante una hora para que se levante.

Now's the time to make the pizza sauce!😋
Take 4 roman tomatoes and we're going to peel them using the the hot cold method.
Heat up some water to a boil. With a knife, cut a cross+ from the top of each tomato going down just barely cutting into it. Plunge them into boiling water for ten seconds, then into a bowl of cold water. This will split the tomato skin which will make it literally peel right off the tomato😅😯😝

¡Ahora es el momento de hacer la salsa de pizza!
Tomamos 4 tomates romanos y los vamos a pelar usando el método del caliente frío. Calienta un poco de agua hasta que hierva. Con un cuchillo, corta una cruz + de la parte superior de cada tomate bajando apenas cortándolo. Sumérgelos en agua hirviendo durante diez segundos, luego en un tazón de agua fría. Esto dividirá la piel del tomate, lo que hará que literalmente se despegue del tomate.

Now, cut them in small cubes and with a chopped clove of garlic and one oinon, cook in a pan with a little olive oil. You'll need to add a teaspoon of brown sugar to remove the acidity of the tomatoes, then add black pepper, garlic salt, and oregano to taste and simmer over a low fire.

Ahora, córtalos en cubos pequeños y con un diente de ajo picado y una cebolla, cocina en una sartén con un poco de aceite de oliva. Deberá agregar una cucharadita de azúcar moreno para eliminar la acidez de los tomates, luego agregar pimienta negra, sal de ajo y orégano al gusto y hervir a fuego lento.

Now you can spread your dough that has risen on an oiled pizza pan and spread the sauce on top. Cut up your toppings and put them on with shredded mozzarella and put it in the preheated oven (gas oven sucks for this which was just another challenge to my pizza lol🤣). I cranked it up and it finally cooked so happy in the end🤤🤤

Ahora puedes extender tu masa que se ha levantado en una sartén para pizza aceitada y extender la salsa por encima. Corta tus coberturas y póntelas con mozzarella rallado y ponla en el horno precalentado (el horno de gas apesta para esto, que fue solo otro desafío para mi pizza jajaja!). Lo ensañé y finalmente se cocinó tan feliz al final.

Absolutely phenomenal job and very excellent work making pizza from scratch.

Absolutely delicious and me and my puppy dog could really see making a bunch of those and snacking out all day long.

Especially since I have this very large chunk of hash.

Avocado cooked inside the pizza? Hmmmm, sure, why not! I will try it sometime :)
I used to work at Domino's Pizza back in the 90s. I worked there for 5 years and did EVERY job in the store, including manager, driver, etc. And yes I could spin and throw pizzas like a pro... up to the ceiling and back, over and over, back and forth, tricks, etc LOL
It is probably a lost art nowadays, with many crusts being pre-made.... hmmm... not as good.

I can spin it so it sticks to the ceiling lmao🤣🤣🤣😅 No, I'm quite clumsy, better not try😝 But I'm going to be honest, although I've tasted the avacado on pizza in France, I'm not really a fan. In Mexico they put a lot of pineapple on pizzas, and while I've always thought that was grosse...I must admit that I liked it🤫🤫🤭🤭 Should I hide? Will I be hunted down?👀😎🤣🤣🤣🍍🍕 Next time I'll try that😋 In France people from 30ish up make the pizza, pie crusts etc. It's the younger generations and some big store conditioned older moms that buy it premade. I do too, but only when I'm in a hurry. In Mexico they rarely sell them so all hands on deck, let's get this crust made. Did you know that you can peel a tomato with only a lighter?😅

I wasn't aware pineapple was controversial on pizza until a few year ago, when that became a meme on social media. I'd never heard anyone even jokingly say pineapple doesn't belong on pizza. The only real argument I've heard is that it's sweet. But we put sweet onions on pizza, we put sweet sauce on it, we put sweet tomatoes on there, and so on. Pizza can have sweet flavours sometimes! I mean it's like any topping, you don't have to add it. I don't add meat anymore. And I've never added anchovies, haha. To each their own. Maybe there's a life lesson to be found in pizza preferences and philosophy? Hehehe.

Anchovies yuk!!🤢🤢🤮🤮🤮 South of France being so near Italy a lot of people there eat it with anchovies😖 Gives me the heeby jeebies😬 I like capres though...and tons of mushrooms. Tomatoes are actually a little sour, which is why we put a little brown sugar in tomato sauce. I think it's the cooking of it that turns it sour. But cooked tomatoes release lycopene which is very good for your health. What makes pizza unhealthy is all the cheese, meats, and GE gluten in the flour in the crust. The gluten in Mexico is still the normal gluten I do believe because I'm allergic to what they're pushing in France now. Yes, there might indeed be a life lesson to be found in pizza preferences lol🤣🤣😝 And the lighter trick causes a thermal shock which cracks the skin of the tomato and seperates it away from the pulp😉

Mushrooms are awesome on pizza. I also like onions and garlic, and luckily also so does my wife! There are much better non-dairy cheese products out there (and recipes for making them yourself) than there used to be! I am impressed with some brands. Very tasty and with pleasant texture, even after cooking. Maybe you've tried some? And yes, gluten is often a huge problem. For me it's very harmful, so I haven't had any in 5 years. I had to learn to make my own pizza crusts again... out of new materials! But I now have a good recipe that works nicely. Not for tossing up to the ceiling, though, it would be a huge mess! I think gluten helps dough stretch.

Yes, garlic and onions are meant to be shared🤣🤣😅 I've never tried the no cheese brands but the mozzarella here in Mexico seems lighter to me. I've made quite a few gluten free crusts but with a premix of flour already measured together that I used to buy in the French organic stores. But the secret to give it that gluten texture was putting a half of a natural yoghurt and an egg in it with 1 tablespoon of olive oil. You can replace the yoghurt with applesauce as well.

Any time🙏 Shows that living in the south of France near Italy with tons of Italian natives as well as descendants at least taught me something lol🤣🤣🤣 But I still can't swing the crust in the air without it getting stuck on the ceiling😅🤪

My girlfriend is from Italy and we love pizza, especially when it’s homemade! I like you and can never quite perfect the art nor do the spiny thing, but I can still make a funny Italian accent while I do it to make it more authentic 😁

Love your recipe and thanks for sharing it. Keep on posting and hopefully your posts will get more attention in future (it’s taken me 4+ years but eventually you find a place)
