I love mushrooms! Normally my wild mushroom foraging only goes as far as field mushrooms. But this past Autumn when out on a walk, I came across one, or rather many that caught my eye.
Oyster mushrooms grow on old dead wood. They grow in profuse clusters and can be quite large. This particular colony were growing on an old tree stump.
After collecting over five kilos and leaving as much behind on the tree stump, I triumphantly returned home to the kitchen.
When foraging for wild mushrooms, only collect and eat ones that you are absolutely certain are edible. Many are deadly.
You can see from this photo how large some of these mushrooms grow. They are simply huge!
Of course the point of collecting mushrooms is to cook and eat them. Here I am cooking them with a simple cream and (self collected) herb sauce.
I also added some leaks.
And then served them with rice.
Oyster mushrooms have pleasant almost almond smell to them and a slightly sweet taste to them.
With so many mushrooms, guess what was on the menu for the next week?
Excellent recipe, I like mushrooms can be given a lot of flavor depending on what you cook it with, you can also accompany it with potatoes, what do you think?
Potatoes sure! They are a good compliment to mushrooms.
Try cooking the mushrooms first in a dry pan by themselves to initially cook off excess liquid!
It will make a bit difference in their texture, very pleasant and chewy.
Also a cast iron makes a big difference!

Aaaahhh that looks sooooooo goooooooooood! I love mushrooms but I think there's one type that we will collect from the wild (and then only if we're dead certain it's the right one) and the rest we coward out and either buy the mushrooms themselves or mushroom kits from shops XD

I love mushroom foraging, or any type of food foraging actually. It's amazing what I can find around my neighbourhood. It's crazy, most people don't even see it even if it is right under their nose. They've been brainwashed that only food from the supermarket is "safe." At least what I gather has no chemicals or GMOs, and... is free. 😀
We raid a lot of fruit trees and decorative hedges that are actually herbs in our area XD Also grow fruit trees along our front fence so other people can do likewise :)
Do you get funny looks when you're grabbing what other people think are decorative shrubs? :D
Mostly cross looks and admonishments when it's from the botanical gardens around the corner. 😀
Well if they don't want people to forage they shouldn't put food plants there ;D
Although if they just embrace the food plants then it could be a community garden as well as a botanic garden and be even better!
There are a number of community gardens around the neighbourhood. The botanical garden is attached to the University, so the plants are part of their research. No GMOs as far as I am aware. The garden has been a great resource for (other than knocking off food) learning about the local herbs and edible plants. When I go out into the fields or forests, there is an incredible amount of food and herbs that I can identify now. But, most people just walk past it, for the aforementioned reasons.
I won't be starving when the apocalypse strikes. 😀
