Pumpkin time

Last Saturday I bought a piece of pumpkin at the market. It was like a quarter of a pumpkin, cut up right there on the stall. That came in handy because a huge pumpkin would be too much for me, now that there are only two of us; and although there are many dishes that could be made with pumpkin, I think we would get bored if we saw this ingredient in everything for a couple of days in a row.

From that piece I bought, I decided to make strudel, which is quite popular in my family, as well as pumpkin puree, mixed with potatoes. The poor pumpkin waited in the fridge for a couple of days because I didn’t really have the motivation to prepare anything.

Yesterday, I finally picked up a knife and the pumpkin carving action started. First, we should remove the hard skin, and the way I am holding the knife and cutting it is a form in which you should not do it. I mean, you can if you want to cut yourself and have a band-aid on your fingers.

It is better to place a slice of pumpkin on a cutting board and remove the skin little by little, cutting downwards.

You will obtain several smaller pieces of the pumpkin pulp, already without the hard skin.

I was thinking about using the seeds too, but I ran out of time, so I didn't prepare roasted pumpkin seeds. Maybe next time, as I like them.

For the strudel, you have to grate the pumpkin pulp. I started with one piece... then I called my husband to grate the other pieces as my arm was not happy with this activity.

Once we had the pumpkin grated, I unpacked the filo dough. I didn't prepare it by myself (however, I know there are experts who can make these thin sheets of dough at home), I bought it and it was really ok, very similar to those that my mom uses for her strudels.

We will need to place one, or better two layers on a flat board or table as I did, brush it with oil and then cover it with the grated pumpkins. Sprinkle it with sugar (I used one tablespoon for each roll, but frankly, I could put more to achieve a bit sweeter taste) and cinnamon.

I also grated one apple and made one roll with it.

After putting the grated pumpkin or apple on the filo sheets, you need to roll them and place the rolls into the baking tray. This was the first one.

I got four with pumpkin and one with apple.

Some 20, or 25 minutes later... maybe I had to leave it a few minutes less... the pumpkin decided to escape from some rolls. 😅

Leave just a few moments to cool down a bit and cut into slices... and then, please serve yourself! :)

Hi, What a delicious post, I mean what a delicious pumpkin! I love it. In my house they grow in the yard because there is soil available and I throw the seeds in and they hatch and I can grow them easily. I usually put on the fire pieces in a casserole season and sauté with various seasonings there, onion, chili, tomatoes, cumin, oil. Then I put raw rice previously washed and add water in proportion to the rice I put, salt and tomato puree, stir and cover and let simmer for 25 minutes. Give it a delicious yellow rice with pumpkin. If there is meat I can add to the preparation. Also pumpkin flan is a tasty sweet. A question, well two questions: how do you make the seeds, I've never eaten them, I always throw them to be born and the other thing that is that phyllo dough. Excuse my curiosity but it is better to ask than to remain in doubt. Thank you, I know what I can offer you if one day you visit us 😂.

That is great you have a lot of pumpkins in your yard. I live in an apartment so no space for pumpkins, I know they need a lot of space, my mom also has them in her garden.
So, the roasted seeds are easy to prepare, you have to wash well the seeds, to remove all the pumpkin from them (that is probably the hardest thing), then dry well the seeds and put them into the oven. When roasted, they are eaten like pipas (sunflower seeds).

Filo dough (massa filo) - they are very thin sheets of pastry, usually used for baklava for example (in Turkish cuisine), also in Greek cuisine for some dishes, then gibanica, you can see them better in this post :))

How great, I have never used these doughs, if I get them in the supermarket I will make your preparation, it is great because it is so practical to prepare, pumpkin is wonderful for preparing desserts.

It's very easy, and practical as you say, the only difficulty was to peel and grate the pumpkin
And yes, pumpkin is excellent for desserts 😊

Seriously though, I once needed stitches holding a gem squash in my hand. Your hands are your main asset as a pianist, so take good care of them!
My Dad invented a gem squash cutter thereafter, I still have the original one😊This is Strudel with a difference, looks very good @mipiano😋 I for sure want to try making this.

Aw, that is awesome! Genius minds those that make such inventions. Well done for your father and you for still having the original. My dad also likes to make helpful tools for the works in and around the house. He has always worked in that way, mind over strength and physical possibilities.

I'm a fine one to talk! There still are times when I hold vegetables in my hand because I'm too rushed to get out Dad's gem cutter!
Our Moms are/were lucky to have men like that. My Dad believed in making things easier for everyone.

It is so simple to make, I think I can manage it ✌️ Adding a scoop of vanilla ice cream will make this a perfect dessert

I also love getting my husband involved in my kitchen. At least he can get some physical activity while he's sitting around relaxing :D

It's super easy, and the filling can be apples, cottage cheese, poppy seeds etc. For pumpkin, add a bit more sugar than one tablespoon, I feel I had to put more... but with ice cream would work perfectly indeed 👌 😊

Well, I love pumpkin, also carrots. But I never buy sheets like that, never see in market around my house. But I would love to try similar things while I am thinking about pancake 🤣

These sheets are also used for sweets like baklava. I found filo doug just in one market here in Spain, not so popular as in my native country.

Smart one of using filo, I had something with puff pastry earlier in the week and that is just way too heavy for everything. Filo is the perfect in between thingy.

But damn...grating it...cutting is already a nasty task, let alone grating it. Blender? :D

Puff is too heavy indeed, although it is more common here in Spain than filo. I found this just in one market.

I am not sure if in blender it would be the same... grating is the thing, like an old school thing haha, but then strong and trained arms are needed. 😆

I am sure filo dough is more common in your country, as in mine too 😉 than here in Spain. My mother usually makes both pumpkin and apple strudels, in the same baking tray, but of course in separate rolls so that everyone can have them to their taste. Oh, yes, it is also common in Hungarian cuisine to make it from ground poppy seeds.

P.S. If you make it, add a bit more sugar to the pumpkin, I added just one tablespoon for one roll but it needed to be a bit sweeter. Well, a healthy version then without a lot of sugar :D
