Have any of you got spouses that let out a big theatric moan when you tell them it's tofu for tea? I suppose some of you are the ones complaining at the mere mention of it existing.
But I need more protein - I'm at that age when I should be having a LOT of it for muscles and tendons. And if I don't like eating a lot of meat - if at all - it's tofu that comes to the rescue sometimes.
This time I tray baked it for the first time. I've seen this recipe online for tacos and as a replacment kinda 'mince' and thought I'd give it a go. First of all you grate it, mix it with a splosh of olive oil and tamari, garlic powder, cummin, a pinch of cinnamon, some smoked paprika (unfortunately I didn't have any) and bake it in the oven til kinda dry and crispy.
To be honest, I loved it like this, but I thought I'd kinda follow the idea of adding a taco style sauce to 'rehydrate' the dry and crispy-ish tofu.
The sauce was a can of tomatoes blended with garlic and onion, more cummin, a bit of ajvar, some homemade habanero hot sauce, a bit of honey, and the juice of a couple of limes. The recipe called for maple syrup and chipotle which would have been nice but if you don't have the ingredients, you make do!
I then made a high protein rice which was actually a packet brown rice with brown lentils from Aldi. I'd sauteed some spring onions (I'd run out of onion) and added a few spoonfuls of toasted pumpkin and sunflower seeds.
And because nothing is better for me right now than all the protein I can get, I also added roasted sunflower and pumpkin seeds and a big dollop of yoghurt. The salad was thin shaved zucchini (in the absence of cucumber, and because it came from my garden) with mint and a vinegar dressing so the zucchini wilts. Avocado would have been perfect too.
The tofu was absolutely delicious and even my husband LOVED it and said he would eat it again, even if it WAS tofu.
It would also be fantastic with black beans as a taco filling or even as the 'meat' on top of nachos. I feel like I've discovered a whole new world.

Oh yum! That sounds terrific. I think I will try it. Like you, I’m not fond of consuming much meat, but I feel most energetic when I have plenty of protein in my diet.
My favorite tofu recipe is called mapo tofu, which is a seriously spicy Asian dish cooked with tons of chopped hot red chili peppers. My mouth waters when I think of it!
Oh I saw mapo tofu made on that Netflix Korean cooking show and definitely want to try it!

For some reason, I am not a big fan of these dry items, need some kind of curry :) A mutton or prawn curry with it, will help.

That looks delicious, its sad we don't eat Tofu at home. My oldies not really a fan of tofu 😫. But I like the tofu recipe cooked in soy sauce and vinegar.
I don't know that recipe, sounds good. I reckon this recipe might convert them to tofu possibilities!
Actually, you can also just fry them and make a dip made of soy sauce and vinegar and dip the fried tofu on it 😊

Yes, tacos and a pie would work well too. Maybe even as a pasta with tomato sauce… or pasta bake as the oven is still warm. The ideas that pop up hahaha 🤣

Tofu is good! It sounds delicious like this. Hey, your "taco style sauce" sounds interesting. Never thought of adding garlic...
I prefer tomatillo over tomato though.

which are your favorite? I've been meaning to grow some of the black variety ever since I randomly found a few that fell out of a small hole in a bag in the store..
They all have a different use. I love red as they go all mooshy and make a creamy soup or curry, and I love green for vego bolognese, and brown or black hold together really well for bite and texture, like adding to rice dishes.
Tofu is a very bland ingredient but also extremely versatile especially if you're a creative cook. That tofu hell in Culinary Class War!! I thought some of the chefs wanted to die after the third round!
That was freaking hilarious!!!!!! I mean of all ingredients! They did do some creative stuff but the fact they had to make the tofu stand out was too much 🤣

I've only really had Agedashi tofu when I get sushi. But I've never had it this way. This looks appetizing.

Tofu itself is quite tasteless, but indeed when you marinate it well, tofu can be really good. We often marinate it and put it in our airfryer to eat it in a wrap with vegetables.

Oh this looks and sounds great. I cook tofu about once a week, my eldest daughter has started to make Miso soup every now and again as well. You are very welcome to come over this way and cook Tofu, no moans over here lol xxxx
