Dehydrating and cooking with tomatoes from the garden

With so many fruits becoming ripe it was time to collect a whole bunch, cut them season them and put them through the dehydrator. These are mostly roma tomatoes, we got a lot of them. So glad we have the dehydrator to take many of them to preserve them for a longer time than they would be good just sitting whole.

So many to cut up, but its fine. It only takes around 30 minutes. There are also two tomatillos in there, we will not be dehydrating those but instead just cook with them.

Around two small buckets were collected and we used all of them for one dehydrator batch.

Cutting them thin is key, so they dehydrate quickly and fit in the stacked trays.

Using a sharp knife, a cutting board and a empty tray I slowly add slices. Soon we will add the spices.

A mix of seasonings give them extra flavor when dry.

We use garlic, onion, itialian spices and salt.

With the trays filled, we run it overnight.

I will come back in the morning and check on their dryness.

The next day it all looks good! Time to jar them up.

They come off quite easily, glad as not everything likes to come off the trays so well.

With two jars partially filled, I put them in the fridge.. If I want them to last longer I should add some avocado oil to them, but for now this is fine.

Right away we start using the dried tomatoes in a pasta along with some raw tomatoes as well that we did not dehydrate.

Fresh tomatoes in pasta is the best.

Served with some bread, maybe a little too much..lol they are little

Extra good when I put the pasta on the buns, oh man gonna have carb overload in a bit.

It looks quite delicious. I used to have a dehydrator back in the day, but I got rid of it over the years. I used it quite a bit when I first got it. I made quite a bit of jerky with it, but I think it doesn't help that my wife doesn't eat beef. I kind of stopped after we got together. I think I ended up selling it in a garage sale.

Ah yeah we have made jerky too, we have one for meat and one for non-meat so we keep the separate.

Yep you can dry them and powder them further to store.

Oh man you make natural food look so delicious. I am massively into organic produce where I can, because it can be quite a costly exercise. But as far as I'm concerned you can't put a price on having less chemicals in your food.

You have done an excellent job with preserving, seasoning and cooking your tomatoes. Can I ask do you cultivate your tomatoes organically?

So true, we try to eat healthy too.. it may cost almost twice as much to buy healthy ingredients but well worth it.

Yes we stick to just organic methods. Using fish fertilizers, soap and salt based insecticides and such.

That's so cool! You'll be able to use every harvested crops and preserve them well and without them being wasted. That's really a convenient tools. And that pasta looks soooo good 🤤🤩✨

That is the plan, hopefully we can store most of it.

Do they still taste the same after drying or taste changes?

They taste even stronger.. the flavor of tomato has a very acid flavor when dried.

It's new to me that tomatoes can be dehydrated, it's a good idea to creat a chips using dehydrated tomatoes since here on my country, it's popular that vegetables and fruits are dehydrated to create a crispy but delicious food. I bet it's delicious since it was seasoned and also it's still nutritious.

Ah yeah we made some tomato chips, they are fun to eat.

Dehydrated tomatoes are my favorite! I put them in a jar, and pull a vacuum on the for storage.

Ah yeah we need to pull the air out.. or just submerge them in oil.

Hadn't tried oil, but I have a refrigeration style vacuum pump that pulls a really hard vacuum.
Most of the kitchen type only pull 12 to 14, but mine pulls 28.5. Should last a lot longer on the shelf. I make sure the tomatoes are are dry to the brittle point too. No moisture, no oxygen; no problem!

It's really so nice getting fresh veggies straight from the yard or garden. Your tomatoes are yummy and I just learnt that one could add seasoning to the tomatoes before dehydration, to give them that super aroma. 😊

Tomatoes are looking great! I love my dehydrator <3 It runs nonstop through the winter, but is too humid here for summer dehydrating. It will get fired up in another month or so. Your pasta looks good and your bread..😋 I always eat more bread than the pasta itself lol. Great preserving!

Oh wow, this looks incredible! I wish I could come up with ideas like this when I'm harvesting my crops. Every time I have a ton of tomatoes and peppers, I end up with way too many and struggle to figure out how to use them. I guess I’m not being creative enough because there are so many things I could do with them. We usually just end up tossing them to the kids until they eat them all!

Yep you got to get all that water out of them, that way they store better.

Nice work! Looking forward to drying food at the end of the season. I do love roasting a big tray of tomatoes with herbs and then blending that and adding it to the freezer - it makes an awesome tasting pasta sauce1

Thanks, ah that is a good idea. I do not think we have tried just roasting the tomatoes and blending them.

I think I am going to try that as I have a whole other pile of tomatoes now...lol
