Set up your workstation with the prepared beef, cheese, and tortillas. For each tortilla, add a bit of cheese and a couple of tablespoons of the meat mixture. Roll them up tightly and place them side by side in a baking dish. Remember to reserve some cheese for topping!
Step 5: Bake
Cover the assembled enchiladas with aluminum foil and bake them in a preheated oven at 375°F for about 20 minutes. After that, remove the foil and continue baking for another 10 to 15 minutes, or until the cheese is melted and bubbly.
