Preparation:
Filling:
In a pan, heat the oil or olive oil and sauté the onion and garlic until golden brown.
Add the chopped tomato and cook until it starts to break down.
Add the shredded chicken and mix well.
Season with salt and black pepper to taste.
Add the chopped parsley and mix.
Set the filling aside.

Dough:
In a large pan, add the chicken broth, milk, butter, and chicken bouillon cubes.
Bring to a boil over medium heat.
Once it starts boiling, add the all-purpose flour all at once, stirring vigorously with a wooden spoon until it forms a homogeneous dough that pulls away from the sides of the pan.
Continue stirring the dough for about 2 to 3 minutes to cook the flour well.
Transfer the dough to a smooth surface greased with a bit of oil. Let it cool slightly.

Assembly:

With oiled or greased hands, take small portions of dough and shape into balls.
Flatten each ball in the palm of your hand to form a disc.
Place a teaspoon of filling in the center of the disc.
Close the dough around the filling, shaping it into a coxinha (teardrop shape).
Dip the coxinhas into the beaten eggs, then coat them in breadcrumbs.

Frying:
Heat the oil in a deep pan or deep fryer to a medium-high temperature (about 180°C or 350°F).
Fry the coxinhas until they are golden brown all over.
Remove with a slotted spoon and place on a plate lined with paper towels to drain excess oil.
