I started 4 different posts in the last two days or so but I decided to go for the theme of today:
It's fair to say that I felt a bit uninspired this morning and lacking in energy.
I didn't know what to have for breakfast, was starting to get hangry and thinking of just going for coffee and no food ( not the wisest of decisions ).
And no, I don't smoke
Many smokers ( and Jim Jarmusch ) seem to think coffee and cigarettes are a good combo.
A cigarette, to start the day, is honestly the nastiest thing I can think of ( and I have smoked ).
Back to this morning...
I looked around my kitchen, then summoned all my will power and asked myself:
What would Hypersensitivosaurus do?

As it's Sunday morning, the answer soon came to me:
He would bake oatmeal pancakes for breakfast
so that's what I did.
Ending up with 9 small(ish) pancakes.
I ended up having four of them for breakfast. A double one with some nutella in the middle and a double one with some rice 'honey', with a coffee on the side.
The remainder will be saved for later today and I'll probably eat them with veggies, some nuts and seeds and possibly some raisins, to compensate for this morning.
My stomach is a little but upset for reasons unknown ( don't want to blame these beautiful pc's for it ).
I guess it doesn't help that I don't have a wolf for a friend, out here ( @inuke, where you're at? ). A furry fellow that would come running, as soon as it smelled the baking, to devour most of the pancakes before I would have time to taste any.

And if you're interested in the recipe of oatmeal banana pancakes, it's super simple:
1 banana
2 eggs
100 ml of (any kind of) milk
75gr of oatmeal
1/2 tablespoon of cinnamon
1/2 tablespoon of baking powder
Mix all the ingredients in a bowl ( use a hand mixer )
or mix them in a blender. Doing it by hand, whisking, will make the batter a bit rougher, especially if the oatmeal flakes are big.
Bake the pancakes on two sides, in a frying pan, in a bit of butter.
And for those who don't do dairy, just replace the eggs by more bananas or something else that can replace eggs and use any kind of milk that doesn't come from an animal.
The same goes for the butter, or just use olive oil or something alike.

by the way, @fenngen , to answer your recent question, this is what (Dutch) pancakes look like and how you bake them, although they are usually made with flour, eggs, milk and a pinch of salt.

Great minds think alike.
As a Dutchie, I know how to make pancakes, without looking up a recipe
but I did search for the recipe for oatmeal pancakes, as it had been a while and I didn't grow up with those.
For old fashioned Dutch pc's, I tend to use only two eggs, a liter of milk and about 400 grams of flour for normal pancakes, so two eggs seems like a bit much for this recipe. I would also add a bit of 'karnemelk' (buttermilk) or even a tiny bit of beer to the batter and a pinch of salt. Cheese and or bacon pancakes with syrup are the bomb.
Oh, even more Yum! Aye, me growing up in Scozia, we call them drop scones rather than pancakes, and made them with flour, baking soda, cream of tartar, egg and milk. I think. Here in Italia it is not easy to find the equivalent of baking powder. 😊

Although it sounds like you have to pick them up from the kitchen floor,
like I did with my bread, days ago.
I never used baking powder in pancakes before. Today, I followed a recipe, for a change, haha!
Next month you can bake them, when I am around. I will arrange some strawberries, ice cream and chantilly.
Let's see. I am kind of in healthy mode, once again so I would probably go for veggie pancakes but we might have this for dessert ;<)

I basically meant to say that they look alike ( the oatmeal pc's and the normal pc's ) but when I bake pancakes, the Dutch way, they are thinner.
Poffertjes are probably called Dutch pancakes when you're not Dutch. As I am a Dutchie, I just call them 'poffertjes'.
yamyam, whatever today was it was definitely pancake day. we had one made by our japanese friend, with olives and white cheese!

I actually had a second meal with fried veggies and two pancakes. I much prefer(red) that over the sweet stuff and so do my body and mind.
aye, if it all goes smoothly it will be the last full day today. said goodbye to a good friend yesterday and other things to take care of.
it's sort of unusual not being back in any foreseeable capacity so we don't want to overhurry.
still, we'll leave the country in the next days and see when we can get that boat.
pancakes in all formats are highly sought after, especially in van life ahhahaa
