Wild mystery mushroom, lentil and walnut pate

It has been a couple of weeks since I've participated but I think I will throw this in for this week's Plant based challenge.

I found it a little surprising to have one of the choices be "pate". I don't know why. I am always thrown for a loop with the six choices given. I chose pate. I have purchased plant based pate many times and made it myself as well. It's a good quick fix for someone on the run.

I have been purchasing weird mushrooms that I'm not used to here in the city. A mushroom guy sets up a stall at a park with a few other vendors selling veggies.

The other day I went there and he had something new. I have never seen it before. I asked him what it was but now I forget.

I thought it looked very mushroomy and earthy and woodsy. I don't know
really. I'm city folk. Nevertheless I needed to try it, especially because he said it was his favorite.

I thought it would be perfect for a veggie pate.

Wild mushroom lentil and walnut pate
2 or 3 cups mushrooms (I used mystery mushrooms)
2 cups lentils
1 cup walnuts
1 chopped onion
4 cloves minced garlic
1 sprig fresh thyme or 1 teaspoon dry thyme
2 tablespoons cracked black pepper
1/2 cup chopped parsley
2 drops liquid smoke
Juice of a lemon
3 tablespoons soy sauce
3 tablespoons maple syrup
2 tablespoons tomato paste
2 tablespoons olive oil
3 tablespoons vegan butter
Salt to taste

Saute onions and garlic in oil and vegan butter, then add mushrooms and other ingredients.

Blend ingredients together in a processor. I have bad equipment so I had to do it in increments. I also forgot to photograph some steps. Ooops!

The mushrooms really were perfect for this pate. I have to admit, I prefer this to store bought ones.

I love my pate with a generous amount of cracked black pepper.

It was perfect with quinoa bread toasted. I also like it in a lettuce leaf.

Hahhaha it does look like it's been on a mushroom trip lol.

It just tasted mushroomy but I need to find it again and use it alone next time.

Sorry I can't help you with identifying these beauties, but I can tell you I would like you to save me a plate. I have never found a better pate base ingredient than mushrooms, and these look extra special.

I'll ask mushroom man soon and get it straight haha.

This is really yummy! When we live in Cambodia my husband made it a lot but a little bit different from you, I think they are delicious the same. You remind me miss it now! Stay healthy my friend.

Well, I never heard about Pate. Through the challenge I learn something new and take a look deeper into your recipe, I have a new food idea :)

Pate is something often consumed by Europeans that is often made from liver. However since vegan and vegetarian food is growing more and more in popularity, there has been many vegetable pates made over the years. In Asia it is definitely not a thing. It's nice on bread or crackers.

Why thank you so much. Lentils can really be boring totally haha. This is one of the ways I like them. They kind of lend a hand rather then star. You wouldn't even know they're in there.😊

Hmm.. this is absolutely new and fresh to me. I have never seen mushrooms like that before.
I guess you ground the whole thing coarsely.

I didn't really have to grind it before hand. It was just chopped than cooked. After I ground it with the other ingredients to make it a pate. I don't know what that mushroom is but it looks like a maitake. I just don't know if it is.

I love to eat pate but I never eat pate made from mushrooms like yours but I ate the one with dried black mushrooms but I would love to try. Have a good day @carolynstahl.

Eat the colors of the rainbow. Most people I know will only eat shades of brown food haha.

haha funny. I love shades of brown also but only that's cocoa powder smoothie or dark chocolates :))))) Then i'd really die for shades of brown lol

So true but sometimes I love those naughty shades too haha.

They tasted like mushrooms but I didn't really give them a chance to shine with the other ingredients getting in the way. Let's just say it was really delicious. I do wish I knew the name. I have to ask the guy next week. He only sells edible mushrooms so I am still alive haha.

I am not the mushroom queen unless finding weird mushrooms from a vendor makes me that haha. I have a new obsession with them though. There is so much to discover and know about them.

The lions mane here comes from exotic mushroom finders/growers. You may be able to find it over there if you search on line. My favorite is lions mane hands down.
