Making curry is an absolute art form! My late Dad's family spent many years in Durban and surrounds and both he and my Late uncle took their curry-making very seriously! I am glad some secrets were passed down to me, but I know first hand that making the perfect curry can be tricky, but with tofu? Wow! You've done an amazing job. I used to live with vegans and the variety of mouthwatering dishes, especially the curries, are almost endless. I felt absolutely spoilt living there <3

My son went through a phase of roasting and grinding his spices and was super fussy when cooking curry. I'm not sure if he manages to find the right spices in the Netherlands though!

Gosh, wow that is something I have never done. that is next-level spice adoration! I had a boss that would only buy spice from a particular vendor in Durban, but I don't know anyone who has roasted and ground their own. That must have been incredible!
Those freshly roasted and ground spices made the best curries!
I also only buy my spices from one vendor where everything is always super fresh.
