I find vegan cookery fascinating, their dishes are so aromatic and inventive having to use protein alternatives!
So you know all about a Durban curry then;)
My son went through a phase of roasting and grinding his spices and was super fussy when cooking curry. I'm not sure if he manages to find the right spices in the Netherlands though!

Gosh, wow that is something I have never done. that is next-level spice adoration! I had a boss that would only buy spice from a particular vendor in Durban, but I don't know anyone who has roasted and ground their own. That must have been incredible!
Those freshly roasted and ground spices made the best curries!
I also only buy my spices from one vendor where everything is always super fresh.
