A friend of mine called me the other day and as we were talking he asked me if I know any recipes for gluten free bread. I do, but it took me a while to realise how I have found myself in the position to advise people for gluten free recipes. What I mean is that he is a very old friend and I have related him with our youth, when we were eating and drinking absolutely everything without the slightest remorse or concern. There is an old saying that says ignorance is bliss. I don't know about bliss but for sure it was a much more carefree era, having the easiness to consume any kind of crap and actually enjoying it, without worrying that it is a potential poison for our body. Happy times :)
Anyway 8 years ago I started experimenting with alternative diets (but that's a long story and I'll skip it) and about a year and a half ago I cut down on gluten. If you notice the choices you have in a city for a quick snack or a beverage you'll realise that the western civilisation is based on gluten, sugar, coffee and alcohol. And I avoid them all :)
Cooking at home, on the other hand gives you plenty of alternatives. Rice, buckwheat, millet and quinoa are some excellent gluten free foods, easy to prepare and very tasty. But the bread is a bit tricky to replace. There are a lot of gluten free flours but they are expensive and hard to find (at least in Greece).
The basic ingredients are just:
After many tries Fotini (@traisto) come up with the brilliant idea to try oat flakes (available in any super market) and we are now making the simplest and easiest gluten free bread ever!
- Oat flakes
- Water
- A pinch of salt
- Olive oil
For the one I am showing today I added:
- Corn flour
- Linseed
- Black sesame
That's the beauty of that recipe, it is totally flexible. You can add any seed or flour you prefer or you just find handy! You can add more or less water, you can even bake it the double time and you won't ruin it, you'll just have different result!

The only thing that does matter is to have a non-stick baking sheet :)
I don't count the amount of water, I just add until I think it is OK. For 500g of oat flakes and 200g of corn flour, I added about 1 lt. of water. I made a small video clip so that you can see the texture by yourself.
An hour later at a normal baking temperature (around 180 C) it should be ready.
I left it then on a grating to cool off...
...before I cut it and start tasting! My favourite snack is to slice it in half and add oregano, olive oil and olives, all from our own harvest!
But I am sure you can come up with many more ways to enjoy it :)

Wow I like this post! I will make this. I totally agree with @dswigle that your pictures make it look amazing. My body feels much better and less bloated when I eat less gluten and dairy. It is hard, as you say, in this western culture we live in.
Yes, it is easier when you spent your day in the fields where you have to prepare your snack from home and there are not any stores to allure you :)

I hear you. Where we live it is nearly impossible to go out and have vegan/gluten-free food. Unfortunately, healthy foods are not really a thing in Cambodia. That's why we usually eat at home too. Thanks for sharing this recipe!
Living in a Greek island is not much different on that matter! In the summer we do have a few more choices, when the touristy places open, but other than that, almost nothing!

I think very few people think about overeating when they are young. I didn't even know they were excesses, youth wants everything...
I didn't pay much attention in adulthood either. Coffee and alcohol almost daily, fatty food, all my life I forgot to drink water.
I'm starting to feel everything now. I started drinking water, even if I'm not thirsty, I gave up alcohol daily and will occasionally, and try healthier food hoping it's not too late at 68. Why am I saying all this about myself when I should be talking about your post?
Because I want to congratulate you on starting healthy eating and habits at a young age and this will definitely help you to have a smooth old age without any major health problems, especially since you are also doing physical exercise in unpolluted nature.

It is never too late when it comes to healthy habits, there is always something to gain. I don't know if I'll have a smooth old age, nothing can guaranty it, but good habits are not only for the future, they improve the quality of life in the present too!

It is a simple recipe and a simple post, but really quality @fotostef. The photos are incredible, you know I have a few weeks thinking about making a recipe for a flaxseed bread that has oatmeal, I think it's the opposite of what you just did here. I hope to be able to do it as soon as possible, I would like your opinion once this happens.
It's wonderful just taking from our land what we need to eat is a blessing, I congratulate you on that. But what you said first are also great truths, eating everything makes us feel happy but sooner or later what we eat also takes its toll on us. The other thing that is true is that the market is mainly full of things that harm us. I congratulate you for living without eating gluten, sugar, coffee and alcohol. By the way the photos are amazing.

I want to try this, but I can guarantee hubby won't like it and he probably needs to cut his gluten intake more than me. I like that it looks like a small amount, though, so may just try for myself.

Yes, a lot of people don't like major changes in their diet but this bread has taken very good reviews from many different orientated people. Or maybe they just say that they like it because they are our friends :)

I am 40 years old and at some days young and am starting to become more and more aware of how my body doesn't do well on dairy, gluten, sugar and coffee. I have been eating oatmeal for breakfast, almost every single day but I am not sure if I ever used it to bake bread with ( cookies and pancakes, yes ). This easy recipe sounds amazing and I plan to check it out soonish.
