Roasted carrots

Roasted carrots are a real comfort food, even for people that usually don't like vegetables. It's possible to serve it as a main dish or a side dish. I like to chop them up and add them to the salad sometimes.

Ingredients:

  • 500 g of carrots
  • 2 tablespoons of olive oil
  • 0.5 teaspoon of salt
  • 0.5 teaspoon of smoked red paprika powder
  • a pinch of pepper
  • 3 garlic cloves
  • 0.5 a cup of fresh parsley
  • a tablespoon of apple cider vinegar

Preparation:

  1. Turn on the oven at 250°C.
  2. Place baking paper on the tray and put cleaned carrots on it.
  3. Drizzle carrots with olive oil and sprinkle with salt, pepper and smoked red paprika powder.

  4. Place it in a hot oven and roast for about 15- 20 minutes or until the carrots start to turn brown on the surface.
  5. Mince garlic and parsley and mix in a cup with a tablespoon of apple cider vinegar. Toss it with the carrots and put it back in the oven for 3 minutes.

  6. Serve warm or cold as main or side dish.

Yummm, I love the little extras you put on the carrots to enhance their flavour!

Tell me, do you have an electric or gas oven as I have tried to roast veggies in my electric oven so many times and not only does it take hours, but they turn out soft, rather than crispy, whereas I've never had a problem getting them right in a gas oven before...

I have an electric oven, I put them in a very hot oven on highest heat and cover them with a bit of oil. I watch out not to overcrowd the baking tray and that the vegetables don't stick together. Sometimes I even help myself with the ventilation, especially with vegetables that contains lots of water, like tomatoes. But I have to be careful with the ventilation not to burn it.
I like them also like you prepare it and I do it like that too sometimes. I love both versions but the taste is different.

I haven't eat this kind of food before 'fried carrot'. Hope you enjoyed it.

When kids are come over I always make it, as they say Bugs Bunny eats them too. Thanks to him it's easy to make them eat vegetables. 😁

Maybe, for me is for sure a comfort food, as it take 20 min to prepare. 😂 Somehow I found out that children that don't like vegetables, usually likes roasted carrots. Maybe Bugs Bunny is the reason for it ...

Roast carrots are far superior to their boiled or steamed counterparts. I'm going to give your recipe a go next time I cook a roast dinner. Usually I prepare them by par boiling, then toss them in oil and roast until nearly done then toss in honey and finish and finish roasting.

I did this some long time back and have not forget it :)

ive seen people fry them up and serve on a bun like a hot dog...but i think they are just similarly shaped...this would prolly be good on a bun though, i would imagine
