STEEMIT CULINARY CHALLENGE #38: Vegan Sushi Rolls

Hello everyone, your tio luis here <3

Let me start by saying that I love you all

and you are amazing, you are beautiful and you are capable of doing everything you want.



This week the challenge is a Vegan one which comes perfectly as I have adopted a vegan

based diet for the last week and for more weeks to come :)

The benefits are just amazing, there is nothing with some meat here and there but I love

how I feel with this plant based diet and the energy levels it provides me with

So for this week I prepared this raw vegan sushi roll with some home made sour kraut

Delicious!

We will need:

carrot

cucumber

green onion

cilantro

avocado

nori sheet or which ever sushi wrapper of your preference

jicama (for the rice)

sour kraut (optional for extra filling)


we will start with our rice since it is the one that might take the longest.

Back to business

  • first, we need to peel all that skin and if it is a good jicama most likely will have a lot

of skin, I use a knife since it is easier, yes there is some waste but once you get skilled enough

you can get most of it with out wasting a lot and for the price... Using a peeler is not an option

  • after clean we will chop it down to manageable pieces 1 or half an inch cubes, it doesn't

even have to be cubes have in mind it will end up in the food processor and tiny.

  • after we pulse it to the desired size which is close to rice grain we have to squeeze most

of the Jicama juice out of it or we will end up with soggy sushi rolls :S


  • once almost dry I'm not saying it has to be sand dry just not wet, we are ready to proceed

Move on to the carrots and I have this marvelous tool called julienne peeler which will give me

the strips of carrot I need for this amazing meal :D (is the silver one on the left)

now to the green onion!

We also need thin strips of it and the best way to get them is to get a little knife and

make a whole lot of string out of a green onion tail :D

I usually like to get around 10 slices per every half avocado since I don't need them super thick but is up to you

you can also just smash it or add more instead of sour kraut

For the cucumber, we need to peel it, cut it in half, seed it and also do thin strips

now that we have all our mise in place we are ready to assemble :D

Time to fill that nori

we start with cucumber at the bottom to provide structure

next, we place cilantro and the carrots, I like to do it this way because it will also

add a layer of insulation and will protect the nori sheet from getting super soggy

after we add a layer of rice, sour kraut and the avocado.

Remember you can add whatever you desire for this meal. Some jalapeno sound amazing

To close we need to get the opposite end of the nori sheet wet

I don't know if you can see it but just grab some water with your finger tips

and run them across the nori sheet, making sure it gets really moist.

We are ready to roll!

Gently lift the bottom with both of your hands and start rolling with a firm grip

not too firm that you will break the paper but firm enough so it won't be loose.

If it happens to break on you because it happens, dry nori is super delicate

Well if that happens just drop everything on top of another nori and try again :D

or you can snack it as nori tortillas hahaha. Don't worry sushi rolling ain't easy.

But you can always try again until you get it

I also made a really good and simple sauce to go with it

I just mixed

1 tsp sesame oil

1 TBS rice vinegar

2 TBS coconut aminos (like soy sauce but no soy)

and stir it up it was delicious and went amazing with my sushi :D

Also I made a jicama limeade :D

YES! there is no reason to waste all that delicious jicama juice. I just added some lime and since

jicama is sweet naturally, I did not have to add anything else different than ice

It was delicious.

So fresh and crisp!!great job on these and I just love the idea of using the jicama juice in limeade! I forgot how much I love jicama!! I used to eat it all the time dipped in mashed avocado. Yummm! Great entry!!

mmmm yeah that crispiness of the jicama makes it one of my favorite dipping snacks. Who needs deep fried potato when you can have some fresh and crisp jicama :D

You need to try, it is so easy and so good. I just love the nori sheet flavor with cucumber cilantro and avocado that will make a perfect sushi roll for me.

I mean I will not turn my back to an upgraded on ;D but that for a basic will do :P

Although she didn't try this, She hates sea food! I really thought that was a deal breaker but she is good and lets me eat it whenever I want she just doesn't eat it :)

WOW!! I'm so impressed with your magical cookery..it's daunting enough to make good regular sushi, but you made one that's so beautiful and comes with a rice-substitute! You even had the spare time to make a limeade.

I have worked in kitchens for couple years so I'm really not shy you can do it too!!!

Just play with it hahaha live and learn :P and try not to waste hahaha that will make you make some out of your comfort zone food <3

I'm glad you know Jicama now, hopefully, you can try it soon I love it cuz is Mexican hahah just like me

hehe you must have worked in crazy kitchens under hair-raising head chefs (to have come away with such prowess after a couple years =DD)..

So far, everything I've learnt has been from trial and error and experimenting and watching other more experienced cooks cooking ;)

I love how you try not to waste. You're right, that mindset sure helped you to discover and showcase amazing uses of leftover jicama..and maybe your being a Mexican allowed you to know how best to use a Mexican root ;)) I hope to one day try it too =D

Yummy! Next time I make my own sushi, I'll try your recipe! Do you make your own sauerkraut too?

Yeeah, super easy actually I made that batch on the 8/12

Start with some good organic cabbage, everything has to be super clean first of all I use water and vinegar also boil the jars sometimes, sometimes I don't, glass jar and distilled water if possible. that way chances of ruining it go down.
and then just chop the cabbage down and then massage it with some salt. depending on the ammount of cabbage I would use around 2 oz per lb of cabbage maybe, sometimes less.
Massage it good and smash it let it rest, it will create juice then just put all on the jar, Save the outher leaves and wash them good to put inside the jar and press the cabbage down you want to keep it cover with liquid if it didn't drop enough liquid just add water, Distilled water is preferred because is cleaner but I just use tap water, sometimes I boil it and cool it down.

I add caraway seeds it gives it a good flavor, but I have done some garlic, or jalapeno, one time I made a beet one color was super nice ahahah

Just play with it luckily cabbage isn't that expensive

Wow! They look sooo delicious! But so much work to prepare the little beauties! Respect!

ahhaha It is heavy prep to do raw vegan food, but look at the bright side now that I have everything prepared, I can make those rolls in less than 5 minutes. Actually, I did make one the day after took me around 3 minutes to put together and swallow it hahaha

YES sushi can be vegan and vegetarian.. I learned that the easy way once when i had the most amazing combination that I must share with you here.. Please try this!

Avacado, macadamia nut, thinly sliced fresh ginger, small halved tangerine segments.

I know it sounds crazy, but trust me!Wow!

I have another lovely idea you can try.. It goes so well with the flavours of sushi and i think you might love it if you try it!

What about the macadamia was shaved or just crumbled on top? that sushi doesn't sound bad at all ginger, avocado and tangerine I need to try it now!

This looks and sounds amazing @tioluis. I never heard of or tried jicama before, and hope that I get chance to try it one day. We have no Mexican markets near here but there's an Asian supermarket that might have them. Sounds a bit tricky to prepare but I understand it's super nutritious so worth the effort! It's great you look after your diet so well and make really healthy things like this to eat, so that you are still getting a wide variety of goodness. The sushi is presented wonderfully - it's so colourful and the way you arranged the salad makes it a very striking dish. Yet another excellent entry, good luck @tioluis!

Thanks a lot yeah try it maybe any regular store, I found thise ones at Safeway or Raley's I can't remember maybe you guys have something like that over there. Jicama yup is really good I mean pretty much flavorless so you can turn it into wathever you want.

I love it with chili powder, lime and some salt
