Yesterday was my first day completely vegan.
I know most advice is to slowly ease into it... But no I went grocery shopping and I committed to it.
So how did it go?
Easy as pie, you guys.
It was far easier than I expected. This may also be due to having vegan parents and already knowing a lot of their vegan recipes. For example, I was planning to make eggplant parmesan even before I realized I wanted to be vegan. There are two problems with this: no eggs can be used to bread the eggplant, and no parmesan can go into the eggplant parm. This was not a problem for me, though, because I already know that one part ground flax mixed with three parts water will result in the same consistency as an egg. I asked a friend what to do about the cheese. Let's face it: I'm hardcore addicted to cheese. He suggested I try some nutritional yeast. I'll say it again for emphasis:
Nutritional Yeast
Angelic music plays.
This stuff is incredible. It's also packed with B vitamins, including B12, however you only really need a light sprinkle for that cheese flavor, so it's not an adequate source of B12. For vegan eating, B12 has to be supplemented... but it's the only supplement that a well-constructed vegan diet will need. Think about all the people you know on meat-based diets who have to supplement for all the other vitamins they aren't getting enough of. I think supplementing with B12 is a fair trade-off. Oh, and of course vitamin D, because that stuff isn't in our food. It's in our skin.
Now if only I could get Wallace to go for a walk in the day, so we can get some sunlight to make that vitamin D.
But no, Wallace is a coward, and he prefers going out at midnight, when there's minimal chance of seeing any other people, dogs, or moving cars. I'll stick to the supplement for now.
So what about that eggplant parm?
It was delicious! To make it easy, I used to store-bought organic marinara sauce. To add extra nutritional value, I included lots of spinach, mushrooms, and some freshly diced Roma tomato. There will be no picture, though, because I chose the wrong baking dish to make it in, which resulted in a very thin looking meal. I like my food to look as amazing as it tastes, so I'll have to do better next time.
Overall, it was a successful experiment.
I can make any of my favorite dishes vegan.
One just has to know how to substitute.
And speaking of easy as pie...
This photo, and the recipe are from Unconventional Baker. My new favorite go-to site for recipes.
Okay, so I'm not making a pie. I am making a cheesecake. Yes, vegan cheesecake... alternative. It's make with raw cashews (some dry, some pre-soaked), dates, coconut oil, coconut sugar, almond milk, vanilla extract, salt, and maqui berry powder.
Maqui- what? I guess there's a berry called "maqui"? If I hadn't seen this recipe, I would have no idea what to use such a thing for. I wouldn't have even known it existed.
Great stuff.

Wonderful post! I started challenge myself to no meat once a week, and now, I am on a mostly vegan diet. It's good to see more people exploring Veganism. BTW you can get B12 from fortified almond milk.

It was delicious! I'm vegetarian too 😁🌿🌱
This cheesecake sounds amazing! I will have to check out Unconventional Baker. I made some vegan cheesecake cups just the other day, with soaked cashews. It's my new favourite thing, now that I really can't justify actually cheesecake anymore ;) I'm not vegan (yet) but I do prefer to eat that way a lot of the time, that or vegetarian. And I'm looking forward to following your vegan journey to get a feel for it. Cheers! :)
That's great! Thank you for coming along.
interesante post!
Great to hear that. I turned a vegetarian 2 years ago and now trying to avoid all dairy.
Will be a vegan soon.
Cheers! :)
I've been a vegetarian since I was 5 years old 😊
Nice!
Let's get some nice vegetarian food in the evening today. :)
See you.

I would love to!
All that food looks yummy! Although I would love to try it all, it really makes my mouth water. @ellemarieisme
I am probably 99% vegan. I am probably a covert vegan in that I don't really announce it to anyone. The reason for this is because people discriminate against vegans, especially male vegans, so I keep it quiet. It's fairly easy to eat a mostly vegan diet covertly. I often bring my own lunch to work and often focus on the health benefits of a plant-based diet when explaining why I don't eat meat. For example, if you cook meat, it creates carcinogens called polyaromatic hydrocarbons and polycyclic amines.
Thank you for that input. I do notice the hate that vegans get. People's angry reactions to vegan diets is evidence that they know it's better for them. They don't want it to be true, but it is. So they get angry when a vegan is present because it reminds them.
I'm open about my diet here, but not anywhere else besides my parents' house, since they're already vegan.
My sister for example, would be pissed if I asked her to give up meat like the rest of our family did. lol
Hell yea
I take an insane amount of Vitamin D daily. Stuff makes a huge difference in mood after being on it a while.
Make sure it is either vitamin D2 or vegan vitamin D3 as a lot of vitamin D3 comes from sheep.
Just looked it's D3 2000 icy from only veggies. Snd I have another brand from fish oil that's D3 5000 icu
Meg food is the veggie brand and bluebonnet is the deep sea fish oil brand
That cheesecake looks incredible. Hopefully we'll get to see an update with your version!
Maybe not though... lol It's already not going well. I hadn't realized that the recipe was for a 5" springform pan until after I already made the crust... My springform is actually closer to 12". I don't have enough ingredients for that. I transferred the crust to a smaller dish, but it's not springform, so I don't know how pretty it's going to be once I manage to remove it from the container. I'll try.
Lol as long as it tastes good!
Everything I cook tastes good. ;D
It came out great! I pulled it out of the freezer a bit early, it seems, because the center was soft and the pretty design got smeared hahaha but whatever it tastes like heaven.
I used to buy these little vegan gluten free no refined sugar tarts from Whole Foods, and I swear this cheesecake tastes just like them. I'm so excited to have figured out how to make them, because they really are my favorite dessert. I'm not much for sweets, but this stuff... is the stuff. lol
Damn we're missing out on so much good vegan food in the UK...we haven't even got the vegan Ben & Jerry's yet! I know it's not the healthiest but I'm dying to try it.
You gotta make the food you want yourself! Eat stuff that was cooked by humans, not machines. Best bet. Good luck!
Nah, I'm quite happy to eat junk food on occasion TBH, as long as most of what I eat is healthy, and it is.
It's still gonna be yummy 😋
awesome not brave enought to go vegan
Rad! Nutritional yeast is awesome! You could also use Daiya cheez if you want that stretchy gooiness. 👵😺
Yeah, I love that stuff, too, but it's so highly processed that it's really not a healthy alternative.
Ya for sure!
well done on becoming a vegan and that cheesecake looks delicious
Yeah I can't wait to make it.
moving fast
Eggplant parm always been a favorite, never considered it particularly vegan, I guess it is. Do it right and you can convince someone they're eating breaded veal.
Lol It's only vegan if you make it that way. But I feel like anything can be made vegan.
