Fasting can be an extremely lonely experience. I work on the road in the oil business. I spend hours alone in a pickup truck or hotel room.
I started this fasting because life on the road takes its toll on the body. My Steemer friend @XtrodinaryPilot knows this all too well. Food and drink on the road is filled with preservatives. Also, food becomes a break in the day, camaraderie with other workers, and a friend. So you look forward to it.....and eat too much.
I walked off of the drill floor where I was 6'0", 185 pounds, 30 years old, and jacked. I'm now 38, much wealthier, but my health has headed south ever since I took the higher paying travel/management work.
So I figure if I can't navigate the roadways of America to find healthy options, then I'll simply take a break!

Interesting things are starting to happen though. Dreams are becoming creepy. The mind fights itself in dreamland in the absence of food. I've had flying donuts melting away in mid air and then disappearing. I've also had melting cheese cover the room I was sleeping in.
While awake, the mind is in a constant fight of trying to embrace the new energy while fighting it's instinct to get food. The battle over letting you take your fast versus it's desire to not die.
But I'm staying the course. Here is Day 1 and Day 10 pictures.

That amount of change is very worrying. The body needs food in order for the muscles to have energy and heal wounds/repair damages. It can have long lasting effects, not only physically but mentally as well.
Your willpower is respectable, but don't overdo it.
Edit: I mean, I don't want to stop you in your goal, it is your body after all.
Wrong every animal instinctively when sick or injured fasts on water till they are healed. It's been observed time and time again that when a deer has broken its leg it will go to the nearest watering hole or river and just drink water till its healed. there is new science coming out finally that fasting has amazing benefits here are some links for anyone interested

I suggest you do some research on the topic as there is heaps of information out there.
As much as water is necessary for your body. It doesn't provide the required nutrients to sustain a person endlessly. We can go on without eating anything for 2-3 weeks, maybe more, but that depends on every individual and its body mass.
Without eating for a period of time, we will start to use the fat we have saved in our body, after that has been depleted, the body "eats" itself. Using the proteins of muscle mass to gain energy and lastly dispensable organs. The brain and heart needs energy to continue their work.
That is why models have almost no muscle mass.
And your example with animals, how long do you think can an animal live without water? Except camels of course. And to add to that, an animal has more fat reserves than humans, they can go on without food for a much longer time.
Also for a broken leg to heal, it takes about 4 to 6 weeks, if it isn't an open fracture, the bones unable to grow straight without something to hold it in place.
Edit: Ah one more thing, what would you do if you are in the middle of the forest with a broken leg? You would fix it, alright. But how will you survive? You can probably survive without food but without water for 3 days? That would be difficult
Proof is in the doing. the video I shared shares heaps of information if you really want to seek answers. Fasting saved my life. don't run faster then you are able to and start on shorter fasts and work your way up. keep in touch with a doctor to moniter your levels if you want to exceed 10 days water only. Your body doesn't consume itself unless you are already severly malnourished,But it does break down inferior matter and consumes that as proteins such as cancers tumours cysts skin tags virus's. it is always encouraged that during a fast when you start genuinely feeling hunger you should eat again.
Without nutrients how will the body be able to produce antibodies? White blood cells to defend you against viruses?
Anyway, about cancer cells. The body will not consume it but slow down the growth of those cells, since there are no nutrients to support it. That way you can fight it easier.
But nevertheless it is dangerous to fast for such a long time and can actually have long lasting aftereffects.
And you said it yourself, if you want to exceed 10 days you have to keep in touch with a doctor. Would you call that healthy?
It's funny you say that. I was just skyping with my wife and talking about ending it today. I'm past the 10 day mark already and pretty proud of myself.
I figure wait 8-12 months and then do it again.
And you're right, the mental effects are crazy. High-high's and very low-low's.
Haha, alright. Well, I also had a moment I didn't eat anything for 3 days, the effects weren't as bad as yours. I only felt very weakened. Didn't want to stand up or walk, as it was too much of a strain for me. Yeah training with an empty stomach was also a bad idea.
Anyway, much respect to your willpower.

How long do you go for?
I'm juicing in the hotel rooms; if that helps your answer.
I generally do 7 days water only. but this time I want to get to 10 days. Getting sunshine and deep breathing and submerging yourself in water does wonders during a fast, I also suggest doing enemas if you haven't thought of it yet. your body dumps a lot of crap into your colon and since you aren't eating you need to flush it out.
If you want to lose weight fast, you can try fasting, the only problem is after you eat something again, you will gain fat even faster. The key is to regulate yourself. The body needs a specific amount of calories in order to sustain your body. If you train, obviously you need more. But to healthily lose weight it is better to eat a regular amount of food and workout. Humans have needs and in order to achieve personal fulfillment, we have to satisfy our needs. Physical, safety, cognitive needs and so on.
It's true, I recently lost a bunch of weight by regulating how much I eat on a daily basis. I weighed 165 pounds and dropped to 128 pounds in just two months. I made it so I would eat twice a day, walking everyday for about and hour and eating only one item foods. As in combining one item foods such as fish, tomato, pepper, and various other healthy ingredients to make my daily meals. Cutting out junk food is the best thing you can do.
