I remember when I was young, every saturday I went to my grandparents' home and
sometimes my granny cooked for me GNOCCHI, an italian dumplings, made of potatoes.
When I was older, I helped her only when we had to knead the flour to the potatoes. Now, that I am an adult while my granny is getting older, I live with nostalgia those moments, and I try to keep those memories alive, doing something similar.
I really love that dish, due of its softness and taste.

Before starting with the recipe, I would like to give you some advice...the most importants for the success of the recipe:
- scorching your fingers peeling potatoes is necessary
- you have to get dirty as much as possible: fingers, t-shirt, table, everything is close
- it's normal to have doubts about the quantity of flour to use
- when you cut the loaves into dumplings, every 5 dumplings done, you have got to eat at least 3
- at the end the number of dumplings will be in abundant quantities compared to diners
- (seriously) although some also put the egg in the dough, I don't
Take a large pot, put the potatoes into it, cover them with fresh water, and let them boil for 45 minutes.
Check the cooking with a fork, when they will be cooked, put them in a tureen, peel and squash them
Add to the still hot potatoes a few handfuls of flour, and knead the ingredients with your hands, until you get a soft but firm dough.
Take a pastry board, covered it with flour, and on it cut the loaves into dumplings. Gradually create dumplings, put them in a tray, or in a plate, lightly floured to prevent sticking.
Pour in boiling salted water, when the dumplings rise to the surface, they are ready to be drained and served.
I recommend serving them with butter and sage.
I know, it's a simple recipe, and not too fancy one.

They are my favorite pasta. I love them with a white mushroom sauce!
Have you ever tried to do it @koskl? I've never eaten with mushroom sauce...but looks good!
I haven't cooked it with mushroom sauce, or made the gnocchi myself. I have eaten them in a restaurant.
I also tried them with a tomato sauce in an italian restaurant in London, and it was superb.
Even with bolognese sauce in Berlin they were excellent.
When I cook ready made ones at home they are just OK, nothing special. It's probably my cooking!
No, it's not your cooking, it's that everything is homemade, is totally different!!!
Following the traditional italian recipe, the best sauce for gnocchi is butter and sage. Sometimes I eat them with tomato sauce or with blue cheese...anyway any seasoning you use are ok. :)
