Pizza! Pizza! with Market Friday

Welcome to #MarketFriday! So many people have asked for my pizza recipe. Again. Not just any recipe, but, the cauliflower pizza recipe. I know, it wasn't you, just someone who looked like you. Don't judge. I did before I tried it, and there is nothing worse than eating crow. Anyone who knows me, know I love pizza, but this one right here was love at first sight. Just like a forever mate, I have only grown to love it more. This will be the easiest shopping trip ever! Three ingredients to make the crust, plus all the yummy goodness of our toppings.

It's so simple!! Cauliflower, eggs, cheese, and a few select spices. In todays' world, thee are so many people that are gluton intolerant people. Cauliflower Pizza allows you to enjoy a low carb, gluton free treat, mostly made of vegetables. As with this entire recipe, what else you put on it is totally flexible.

I almost never go to a market on #MarketFriday, but today I went to my local Military Commisary where I selected items I would need for this specialty pizza. I know what you are thinking! Cauliflower is that special at all, but guess what? It is very special, especially as I can put this together in minutes!


Cost:
Tomatoes $0 They were my own
Basil $0 It was my own
Cauliflower $1.50 head (I have heard the price went way up today)
Mozzarella cheese $7.49 ounces
Italian sausage 4.99 16 ounces (I won't use all of that)
My total cost for groceries was $14.98

I can make at least 3 pizzas with that

Fresh tomatoes, courtesy of a southern roadtrip, basil from my windowsill, and pepperoni from a stick from Italy, imported sausage. Only the freshest ingredients. The cheese! So fresh, did I forget to mention that? I don't think it would have been fresher if I made it myself. As an aside, I take the seeds out of the tomatoes so they don't make the pizza watery.

The fresh mozzarella is soft and sometimes too hard to cut, but, it is insanely delicious. The pepperoni - it goes without speaking. Just give it a bonafide taste. The best part is putting it all together and letting those flavors meld. I cut the pepperoni off the stick and wash the basil. I fry up the sausage, taking it out of the casing.

I'll take this moment to gather things from around the kitchen, The cauliflower, two eggs, and the cheese - just for now. I don't grate it too early, otherwise, it gets watery.

Recipe for Cauliflower Pizza Crust


Ingredients

2 cups of finely grated cauliflower
2 cups shredded/shaved mozzarella cheese, plus extra for topping
2 large eggs
tomato sauce, pizza sauce whatever you use or use a jarred one
toppings of your choice (tomato, pepperoni, ham, basil, cheese, spinach


Equipment Needed

cheese grater
parchment paper
round pizza pan/ with lip or pizza stone


Directions


Preheat oven to 450 degrees. Cut parchment paper to the size of your pizza pan. If you have a pizza stone, let the oven preheat, then allow the stone to heat for 20 minutes. The stone really makes the crust crispy and delicious. I admit right up front that if you have a pizza stone, use it. It makes it amazing. I have to be honest. I have never done it on a pizza pan. While I am sure it is good as that is how I have seen it made, the pizza stone rules.


Finely grate cauliflower. (2 cups) Remove any large chunks. Make it as thin as possible.

Mix together the cauliflowers, mozzarella cheese (2 cups), and two eggs until they are well combined.

Place the cauliflower mixture in the center of the parchment paper and spread the mixture thinly but evenly. Make a round crust.

Bake crust which is still on the parchment paper at 450 degrees for 15 minutes. Do not cook crust with toppings. The crust must be cooked first. Once baked, take the crust out of the oven, let cool for a moment or three, then put the toppings on.

Note: If you are making it for later or another day, you can freeze it at this point and it will do well.

Assemble the rest of your toppings. Start with tomato pizza sauce (use less than what you think it needs, you won't be sorry!) and place it in the middle, spread out, nearly to the edges. Too much sauce is usually one of the mistakes. **As an alternate way to do it, take the cooked pizza crust and drizzle olive oil on it, then lightly spread it over the top. (no sauce)This is what it looks like right before you pop it in the oven.

Now, for the toppings! Place some cheese (remember the crust already has cheese) followed by toppings of your choice. Whole fresh basil leaves, pepperoni, mozzarella cheese, sausage, sliced tomatoes, mushrooms, and olives. Or cheese sausage and pepperoni. I prefer no sauce. You won't even miss it!

Return to oven, still, on parchment paper, rebake until the cheese is melted and it begins to turn a golden brown. This is usually accomplished in 10-15 minutes.

I have to be honest. I really wasn't sold on it the first time I was preparing it a while back. It's cauliflower, right? But, after using riced cauliflower in the place of rice in certain dishes, it got a little respect from me and I made an effort to try it. I actually prefer it most of the time. I didn't believe it either! It doesn't make me feel too full, ever. I love pizza, but, I don't like feeling like I overate each time. No matter how many pieces I ate or didn't eat. Try it! It just may surprise you! If you do try it, tag me! I really want to know how many people are up to the challenge!


As an aside, I have never done it with just a round pizza pan because I have the pizza stone. I should try it out at least once, but, I am so spoiled! If you used the round pizza pan, please let me know how it turned out! Thank you in advance!

I really want you to try this out someday. I think that you would truly like it. If you ever make it, one of the lessons I learned was I had to squeeze out the cauliflower before combining it with the cheese when making the crust. It is incredible how much water comes out of them!

I will wager that you will like it more than you think you will. As a matter of fact, you will make it again and again.

AHHH! That is one fine looking pizza! I love cauliflower pizza and make my crust in an almost identical manner, except for sometimes I throw in a tablespoon or so of cream cheese, you know, cause it's cream cheese lol!

That said, that Italian sausage looks divine, as does your finished pie! My kiddos are making me homemade pizza for my birthday tonight, and now after gazing upon your gorgeous pizza I am super drooling in anticipation! lol!!

Maybe I'll give it a try but one small, small problem. I don't like cauliflower.

I don't know many people that like cauliflower, however you would be surprised to learn... it does not taste like cauliflower! Truly!! I would not lie to you even to get you to eat cauliflower! It was the strangest thing to taste it and have it not resemble it at all. I hope you will try it just out of curiosity because it is three ingredients to do the crust and then whatever you want for toppings. It couldn't be any easier than this.

If you happen to take a chance on it just a little side note, the cauliflower must be squeezed of the water right before you mix it with cheese. Well this sounds strange it's a very watery vegetable and you don't want to have a watery Pizza. I have to say that one of the biggest reasons that I swapped over is because the regular pizza always makes me feel overstuffed and probably I ate too much of it but this never does. On top of that it is low in carbs and that certainly does a body good. Thanks so much for being a part of Market Friday! You do know that I like you dropping the link for other people not myself! I believe you that it doesn't taste like cauliflower. In fact, I exaggerated a bit by saying I don't like cauliflower. I think it's more that I don't like the smell of it and now after the covid, I'm left with the affected smell, I think it's reduced to half, so maybe it won't bother me anymore. I can tell you that I like cauliflower schnitzel. I think the impression that I don't like comes from the smell of boiled cauliflower.

As a helpful hint: After shredding the cauliflower, I set it on a paper towel to drain the water out of it, then squeeze it right before I mix the cheese and egg for the crust.

I absolutely love this @silversaver888 !! I think I love it more than regular crusted pizza! It is not as heavy and the crust is awesome!

I make it vegetarian by using cheese, basil, and tomatoes I drizzle EVOO before adding the cheese to the crust! Crush up some spices and yummy!

As an aside, I have found that squeezing the cauliflower right before mixing it for the crust takes out a lot of the water. I had no idea it would give me so much! LOL

Thanks for sharing the recipe I have been wanting to try a cauliflower base pizza so now I can with a few variations for one no tomatoes since I am allergic to them and different toppings I won’t say what I am thinking as my ideas of pizza topping ng may seem weird to some well many lol

I drizzle extra virgin olive oil (or whichever kind you have) on top instead of using the sauce. Almost anything works on top, mushrooms, chicken, anchovies - I actually cannot think of anything that doesn't work. If you want a shortcut, I have used riced cauliflower in the frozen section. I will admit I like using the whole head instead, but, the other works well enough.

Here is a hint though. The cauliflower holds water, so right before I mix them, I squeeze out the extra water that it holds. You will be amazed how much comes out. Now I am interested in what you put on your pizza! @tattoodjay!

It's pretty easy here also, but, especially since Covid, many people have found that it is pretty easy to get here. And you can put on it what you want. I am finding that I like the lighter taste of it. You should try it one day and see what you think. It doesn't taste like cauliflower. That is what was funny.

Pizza is on the menu for us tonight too. We are getting it from a place. There is just something special about ordering it from a delivery place. Maybe because we weren't able to do that when I was a kid. We lived too far outside the city for anyone to deliver to us. We had to drive into town if we wanted pizza like that. I don't know if I can do the cauliflower crust. I've been eating more cauliflower rice (as long as I don't have to smell it), but if I am going to splurge on pizza, you may as well give me the real thing. This looks delicious though. Maybe I need to change my opinion.

I get it. I used to like to have a night of it brought to me instead of me having to cook.

Surprisingly, I didn't try it for a long time for much the same reason. I couldn't wrap my head around it. I was not going to be defacing the name of pizza like that, and yet, I did. The biggest thing about it is it does not taste like cauliflower. That was a little weird, but, also... it didn't leave me feeling really full. You will have to tell me if you make one or buy one. There are a few helpful hints. I wonder if the pizza places that have them, if are frozen or freshly made. I have never had one from outside as they didn't have them when we started making them.

I would be interested to see if you try one. :)

I think they have a couple of the frozen style at Costco that have a cauliflower crust. More than likely we will try one of those first before we go all-in!

Even better? It does not taste like cauliflower! The melding of the cheese, eggs, and cauliflower, and spices makes it delicious! If you and your husband like pizza, you should try it. Only three ingredients to make the pizza and mere minutes to put it together. Then the toppings!

As a hint, the cauliflower needs to be squeezed before mixing it with the cheese and egg. It is very much full of water. Just something I discovered along the way.

Exactly! It is the ultimate Perfect Pizza for Keto! I absolutely love it and I hope you give it a try. I actually do not use sauce on mine but I drizzle little bit of olive oil and put cheese basil and tomato. Absolutely yummy!

Absolutely! Keto, low carb, low sugar, Mediterranean, pescatarian and flexitarian foods are my go tos depending on the day, who's eating, and location.

I bet the kids inhale your homemade oven baked pizzas whenever you make them! I was thinking you could even make the crusts ahead of time and freeze them especially if you find cauliflower at that great price again @dswigle 🍕

I never really cared for red sauce when given a choice and prefer EVOO (Extra Virgin Olive Oil for the noobs) along with fresh vegetables, herbs, seasonings and spices on my pizza, pastas and dishes -- prefer my "red sauce" to be the liquid pinot noir varieties! 😀🍷🍷😉

I shred the cauliflower and freeze it in portions. You can use the frozen riced cauliflower, but, I prefer fresh. I just measure them out and freeze them in freezer bags. Especially when I get it at a good price.

I don't put red sauce on mine, just drizzle the extra virgin, usually, I will put think slices of fresh mozzarella, basil, and thinly sliced tomatoes a dash of extra seasoning, and done!

I love using cauliflower also! I would never have guessed that it would taste so good! Believe it or not, it doesn't taste like cauliflower, but, more like regular pizza! I do grow my basil and have it all year round. I just love basil and parsley, but, parsley doesn't grow indoors for me in the winter.

As a note, if you do make the pizza, before you use the cauliflower to mix the crust together with the eggs and cheese, you should squeeze it as it is full of water and makes the crust looser than you will want. I have found this out through making them over time. I have almost perfected it! :)

thank you very much! I understood about cauliflower. I also like fresh basil. I love it in salads and meats. I had an idea to grow this at home, but for some reason the plant got sick and disappeared. probably it is necessary to process the basil with something from its various diseases

I never make pizza from scratch just for me, but yours looks devine !

Three ingredients, El!! It takes 2 cauliflower, 2 eggs, and 2 cups of shredded mozzarella. You can easily make that 1 of each. Sometimes 2 will just make an individual pan pizza. You would have to play around with it and the spices you add to the crust, but, I usually add a tiny bit of parmesan, Italian seasoning, and fresh basil and parsley. Then cook, then add toppings, then cook again. It is minutes to make the crust.

Just for you. Or you could do it for fun with Mom on the weekend. Something different, but, she probably wants to get out.

I will give you one hint: The cauliflower needs to be squeezed out, right before the cheese is put in it. It is full of water! I couldn't believe how much.

Three ingredients for the crust! Experiment before you do it for dinner. One hint! The cauliflower should be squeezed out before adding it to the cheese when making the crust. You will be amazed how much liquid comes out! :)

I always make my own pizza and will definitely be trying the cauliflower crust for a different spin. I love changing things up a bit now and then.

That is exactly how it started with me. I will caution you that I squeeze the water out of my cauliflower right before I put the crust ingredients together! It holds an amazing amount of water. If you don't, it just doesn't come out as well. I should put that up there somewhere.

I certainly will as I love cauliflower. I fermented some this morning with a few carrots as I am really big on healing my gut right now.

Oh, yes! Always! My dad would do that with cauliflower and carrots and red bell peppers in the same bottle. I grew up on that stuff! :))

Thank you so much and I am so glad you enjoyed the post. It is so easy to make this a vegetarian pizza, that is what I do. I will put think slices of fresh mozzarella, basil, and thinly sliced tomatoes with a dash of extra seasoning, and done! Or whatever you want on it.

It takes minutes to put the crust together.

I haven't had pizza forever; I think I may surprise my son with this tomorrow ... it's nearly carnivore:)

You can make it as carnivore as you want or not at all if you prefer. That is the joy of it. Three ingredients to make the crust? No brainer. I make sure to squeeze out the cauliflower before using it. Right before throwing the crust ingredients together. You wouldn't believe how much moisture it holds!

I never thought that I would ever see the words Cauliflower and Pizza in the same sentence, let alone so close with each other :)
I do appreciate though any gluten free recipe and this one looks very very interesting!

Honestly, I resisted for years! It truly does not taste like cauliflower either. Because it is a vegetable and not bread, you don't feel the heaviness or ever feel stuffed. I think you should give it a try. If you are doing it yourself (a few others decided they would try one at a restaurant) the cauliflower needs to be squeezed right before it is mixed with the cheese. I did not realize that it was so full of water!

Diet or allergy? The pizza really is delicious and I have no doubt it would become a favorite dish to make. It's different and yet it fills the square of pizza. It does not taste like cauliflower, which was interesting to me.

I make it vegetarian by using cheese, basil, and tomatoes I drizzle EVOO before adding the cheese to the crust! Crush up some spices and yummy!

As an aside, I have found that squeezing the cauliflower right before mixing it for the crust takes out a lot of the water. I had no idea it would give me so much! LOL

I hope you do make it! I would be interested in seeing your version of it!

I am sure it is absolutely delicious, I'll put it in my to do list :)

I don't have any intolerance or allergy to gluten or dairy but a doctor proposed to quit them as a precaution to an intestinal condition that bothers me for years and I kind of like it so far. I do make some rare exceptions though :)

It looks delicious....🍕 my 11 year daughter learned a new technique...she make crunchy pizza on Chapati...she put cheese onions capsicum, corns and bake it.....it taste too good.

Last time I tried cauliflower pizza, I had such severe gas it was almost incapacitating. I'll stick with sourdough crusts or crypto !PIZZA for now!

You didn't put enough cheese in. That is why I like this one. The first one I had made my tummy hurt, but, honestly, this is the best. :)

Yeah... about that... The reason I make my own pizzas is a dairy allergy. Had I added cheese, it would have been doubling down on the intestinal distress!
